Where Does Kindle for PC and Mac Store Ebooks?

Kindle desktop apps download books into My Kindle Content under Documents. Recent versions put each book in its own subfolder named by ASIN, which looks like gibberish.
The live path shows inside the app under Tools, Options, Content. Close all books first if the change button is greyed out.

Each title in an ASIN named subfolder ending in EBOK on recent builds. Change it under Tools, Options, Content with books closed.
