ETS2 keeps profiles, saves, screenshots and mods in one Euro Truck Simulator 2 folder under Documents. Each profile is a hex named subfolder under profiles.

Copying the whole folder moves everything: progress, key bindings, truck configs and installed mods. Steam Cloud covers profiles too, but the local folder is what you back up by hand.
