Assassin's Creed Shadows keeps local saves under Program Files (x86)\Ubisoft\Ubisoft Game Launcher\savegames. Inside is a folder named for your Ubisoft ID with a numeric game folder inside it. Steam purchases use 1081 and Ubisoft Connect and Epic purchases use 8006.
All versions rely on Ubisoft Cloud for sync and cross progression. Back up the full numeric folder while Ubisoft Connect is closed to preserve manual and auto saves together.

Can I copy a save to another Ubisoft account?
No by simple copy. Saves are encrypted for the original Ubisoft ID and unofficial converters are required for account transfer. Use the same Ubisoft login on each PC and let Ubisoft Cloud sync instead.
